Meals fit for any dorm resident

 

Most people in college don't have the time, space or materials to make a decent home-cooked meal, but they can easily work with average market ingredients with the help of a microwave and mug.

Macaroni-and-Cheese in a Mug      

Ingredients/Materials (1 serving):

A large mug or bowl

1/3 cup whole grain elbow macaroni

1/3 - 1/4 cup water

1/3 cup cheddar-jack shredded cheese

Splash of milk

Directions:

1. Put whole grain elbow macaroni and water in a microwave-safe mug or bowl (make sure it is a big one or it will boil over). If the microwave is stronger, you may need more water. Microwave for six minutes, stirring periodically at four minutes, two minutes and one minute. 

2. The pasta should be cooked and there will be a tiny bit of thick pasta water in the bottom. Leave this water. 

3. Add cheese. Return to the microwave for 30 to 45 seconds to melt the cheese. 

4. Stir well, adding a small splash of milk (about two teaspoons).

5. Enjoy!

Brownie in a Mug

Ingredients (1 serving):

2 tablespoons butter, melted
2 tablespoons water
1/4 teaspoon vanilla extract
1 dash salt
4 tablespoons granulated sugar
2 tablespoons unsweetened cocoa powder
4 tablespoons all-purpose flour

Directions:

1. Mix water, butter, vanilla and dash of salt in a 12 oz coffee mug, whisk well.

2. Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.

3. Microwave for 60 to 90 seconds. Center should be slightly molten. Be careful not to overcook.

4. Enjoy with a spoon. Warning: brownie will be hot.

Deep-Dish Chocolate Chip Cookie

Ingredients (1 serving):

1 tablespoon unsalted butter, at room temperature
1/2 tablespoon unrefined granulated sugar (such as evaporated cane juice)
1/2 tablespoon packed light brown sugar
1 tablespoon beaten egg, preferably organic
Splash of pure vanilla extract
2 1/2 tablespoon whole wheat pastry flour (can substitute with 3:1 of cake flour and all purpose flour)
1/8 tablespoon baking soda
Pinch of salt
Heaping 1 tablespoon grain-sweetened chocolate chips, such as Sunspire

Directions:

1. Combine softened butter and both sugars in a small ramekin or microwavable cup; stir well with a spoon.

2. Stir in beaten egg and vanilla extract.

3. Stir in flour, baking soda and salt just until combined.

4. Stir in chocolate chips.

5. Microwave on high for 35-40 seconds.

6. Enjoy! Let cookie rest at room temperature for about 10 seconds before devouring.

Quiche in a Mug

Ingredients (1 serving):

1 large egg
1 1/2 tablespoons whole milk (substitutes: half and half or heavy cream)
1 teaspoon melted unsalted butter
Pinch of salt
Pinch of freshly ground black pepper
4 small grape tomatoes, halved
1/8 cup torn pieces of fresh bread
1 tablespoon grated cheese (e.g., cheddar cheese, mozzarella, etc.)
1 teaspoon chopped fresh herbs, plus more for garnish (e.g., green onions, Italian parsley, chives, etc.)

Directions:

1. Add egg, milk, melted butter, salt and pepper in a microwavable mug

2. Whisk until egg whites are completely broken up.

3. Add halved grape tomatoes, torn bread, grated cheese, and chopped herbs on top of egg mixture, making sure ingredients are evenly dispersed and have not settled to bottom of mug. Ingredients will stay settled within the quiche mixture better if you do not whisk ingredients into egg mixture.

4. Place mug in microwave, and cook on high for one minute, just until egg is completely cooked and quiche is slightly puffed. Garnish with fresh herbs and serve immediately.
